Ann Marie Afflerbach earned her MS in Human Sciences with a concentration in nutrition
at Texas A&M University-Kingsville, in addition to completing a dietetic internship
program. After completing the requirements of the dietetic internship in 1996, Ann
Marie was able to complete the registration exam for dietitians, becoming a Registered/Licensed
Dietitian. She has since worked in many areas of clinical nutrition, such as cardiac
health, diabetes management, obesity, pediatrics, geriatrics, physical rehabilitation,
and mental health. She maintains this registration status through the Commission
on Dietetics Registration and Texas licensure through the Texas Department of State
Health Services by attending continuing education in the areas of nutrition and exercise,
marketing, weight management, diabetes management, cardiac health, and many other
areas of clinical and community nutrition.
Ann Marie began teaching nutrition classes at the University of North Texas as an
adjunct instructor in 2006. In 2010, she became a full-time faculty member teaching
Principles of Nutrition and Nutrition Sciences to non-nutrition majors. Ann Marie
developed a nutrition minor for non-nutrition majors in addition to two new nutrition
courses, Nutrition Through the Life Cycle and Community Nutrition.
